The Itto-Ryu Hammered 240mm gyuto is back.... https://www.chefknivestogo.com/ithawh2gy24.html

If it hasn't changed much it's a surprisingly great performer with a much cooler look in person. The handle is and always was shit though. :D

Isn't it still significantly heavier than its old counterpart? I seem to remember those old hammered ones to be listed in the sub-7oz region... (just off my memory. Never owned one)

I don't think it's that much heavier than the old version. I have an old 210 that weighs in at 5.75. Hell of a cutter. But Jeff's right, the handle is shit.

Great knife. Just change the handle if it bothers you :)

The quick look video on that page is from back in 2013 so the older version was a pretty heavy knife. It looks like it could just be the old page entirely with them just listed as back in stock.

My older one is 6.8.

Love the hand forged aspect. It was my first JP knive and I still use it about half the time over my newer buys.

The Itto-Ryu was a real surprise to me. I wasn't expecting much when I used it and man was I wrong! When it showed up it was a much cooler looking knife too than the pictures showed.
