I bought the original inventors book of the no knead bread craze, "My Bread" by Jim Lahey to give a try. It sure was easy but I found a few "folds" helped the bread get a better rise. Here is my 2nd attempt at "no knead". Not bad for 5 minutes of work!

For pure performance, in a 165mm nakiri, I would highly recommend the Shiro Kamo R2. It’s light and has a very nice thin grind and the performance is truly superb. Getting cooler finally so I made some rye and some orange/cranberry soda bread. ATK no knead bread with a few embellishments like rye seasoning and caraway seeds. Second rise just didn't have the oomph wanted but the taste is there.

Does he need a 240?
I love the steel in the Kohetsu you have picked out in the nakiri I have but I wouldn't call that a thin knife or a laser. But it should cut well and maintain an edge.
For a thinner (and lighter knife) I'd probably go for this one:
