Re: Konosuke Updates

I didn't mean to start an complaint session - I only replied in jest! I managed to get lucky a few times and sometimes my old age (getting up at night to go to the toilet) I actually snagged one blade at 2:00 am just happen to walk into my office and noticed one at another site and didn't hesitate. ...

Re: Konosuke Updates

I got home from golf today and noticed that I had an email notification that the Konosuke Fujiyama Kaiju was back in stock - can you imagine my surprise when I looked and it was out-of-stock ;-(

LOL -yeah right!

Also, he offered me a set of ironwood western handled Senkos. I never get a chance for these so I think I’m going to take them.

That looks like a amazing blade - how soon will these be here?

I see that they are still available. The only regret I have is I didn't include a felt sleeve or Saya.

Re: Knife Bent?

I always have my iPhone camera ready when I receive a package so I can document it and if I can catch the person shipping I have them note the damage. Thats pretty bad but, I hope you can save it somehow.

Re: Carbon blade care how much effort is it really?

Not much care at all but, I don't mind a patina. A few of my blades did patina heavily at first but they either calmed down by the initial oxide being protective or in some cases I helped it with a coat of renaissance wax which seems to last quite a while as a barrier. I just rinse and wash if neces...

Re: Forum special

Thanks Mark and Sue - great deal! I bought one for a lady from the gym that asked me about getting started on Japanese knives and she purchased one of your Anryu Gyuto's so this will be a great second addition to her new kitchen tools.

Re: Where to buy a Hasegawa Cutting Board

Sorry for any confusion. I was referring to Hi-Soft not Hasegawa. And I do not wash in very hot water. Plus mine are the really large ones and I guess they can warp more than smaller kinds. I have the medium size Hasewaga soft rubber material that my wife and I wash with very hot water and a large ...

Re: Where to buy a Hasegawa Cutting Board

Never tried the Hasegawa Cutting Board before. If they can warp overtime, then yeah it’s a no for me, but you can always avoid warping by rinsed with cold water instead of hot water. If you look at the construction of them just like with plywood with alternating layers and with the edges sealed. I ...

Re: Where to buy a Hasegawa Cutting Board

I should poke around and see if I can source boards like these. Mark. Are you sure you want to be dealing with shipping these cumbersome pieces, especially the larger ones. Also some of them are not long lasting and you may find yourself doing some replacing. My HiSoft warped so badly it had to be ...

Re: Where to buy a Hasegawa Cutting Board

Ray, I'm not sure what board your talking about but I bought two Hagesawa boards the Soft and the harder PE. I don't care for the PE board but as a home cook i don't use it as much as the pro cooks. The board I really like is constructed like very good plywood in balance and it is very easy on my kn...
