I've actually been thinking about getting a cheap carbon knife to abuse, maybe even purposefully chip, just to practice on. Just haven't found one. I'll look up okeya as mentioned above.

All of this makes me wonder if I haven't been air drying my stone long enough. Any experience with naniwa choseras? They don't need to be soaked supposedly so how long should I leave it out to dry?

Yeah I watched some vids about stripping the pan with lye for the seasoning and then vinegar for the rust. Just wasn't sure if all of that was warranted for what I had. Looking better than new now though.
