Tip up.

Had a friend who had it tip down. One day he was reaching for a knife while being distracted, accidentally sliced his finger on one of his knife. Everything got switched to tip up. At least in that configuration he'll most likely bump the bottom of the handle first.

Like babies, don't drop them.

Have a tupperware tub from the Dollar store for storing soaking stones. For non soaking stones and other sharpening accessories, a bottom shelf of an out of the but easy access cabinet works well.

I've sharpen more cheap stainless than good Japanese or good Swedish steel. I got a 200 grit stone that do the majority of the work then it's on to the 1000. I practiced on cheap $5 Kiwi knives made in Thailand. Inexpensive so I'm not concern about making mistakes. Dulls easily so lots of opportunity to sharpen.
