Re: Honing hard steels: pro and con
A knife is a tool. So are whetstones, honing rods and strops. Choose the right tool for the right job but consider the user too. For my kitchen knives I like hard carbon blades sharpened wicked sharp at an acute angle. To maintain sharpness I'm careful when I'm using it, careful to dry it, careful t...

"SEEMS" - ??? When it comes to sharpness, seems got nothing to do with it. A tool is sharp enough for the job or it is not. Sharpness is not about cutting newspaper but is about cutting what you need. At least you are way ahead of the majority who buy a cheap Walmark knife, never sharpen i...

The stones you have are perfectly fine. You are way over thinking it. It's not the stone, it is the stone user. Practice, practice, practice and practice some more.

Unlike cigars, knives are easy. One is safety for humans from being cut and poked by a knife. Compared to knives, we humans are high maintenance, cry lots and bleed easily. Knives are easy to store so long as they are clean and dry they will be happy. Few things in life like being bashed together so...

Tip up.
Had a friend who had it tip down. One day he was reaching for a knife while being distracted, accidentally sliced his finger on one of his knife. Everything got switched to tip up. At least in that configuration he'll most likely bump the bottom of the handle first.

Are you in for a treat Susan. Lots of posts on sharpening and sharpening tips. But here's a few quick tips. Learn to sharpen on a cheaper knife. Get 1 or 2 basic stone and learn to get good with those. May I suggest something in the 320/400 and 1000 grit. For a really nice setup 400, 1000 and 3000 s...

Something sharp. If that something stays sharp for a long time then it's a bonus. Best if that something stays sharp for a long time and is easy to sharpen. As a tool, many Japanese knives are made of good steel that stays sharp a long time and are relatively easy to sharpen. At this stage you shoul...

Having been schooled in Canada, metric. But being in construction since my youth and being an old geezer now, imperial. Having had exposure to both I've learned to jump back and forth depending on the subject matter and who I'm talking to. Most of my friends would glaze over if I'm talking to them a...

Like babies, don't drop them.
Have a tupperware tub from the Dollar store for storing soaking stones. For non soaking stones and other sharpening accessories, a bottom shelf of an out of the but easy access cabinet works well.

I wouldn't interpret the x as misleading though maybe a bit confusing. Once one reads the body of the posting it is clear what one is getting. I'm sure there will be some who chooses to use this to demand something more. There are people like that. In math, x is often use to represent an unknown var...

I've sharpen more cheap stainless than good Japanese or good Swedish steel. I got a 200 grit stone that do the majority of the work then it's on to the 1000. Lots of pressure on the 200 grit and relaxing the pressure towards the end. It's noisy but effective. On the 1000 grit I'd say it's probably m...

Re: Given known dislike, what should I rule in or out?
As with anything in life it's not the tool it's the user. You are still learning and figuring what works and don't work for you. That's normal and is good. At this stage I wouldn't rule out anything yet as it might be your skill that is the problem and not the tool. Also don't be too quick to declar...

Opinel is very popular among the outdoor enthusiast as they are cheap, light and easy to sharpen. They will also take a keen and sharp edge. Got a few Opinel knives in my camping kit for years. For slicing, dicing and typical knife usage they are great. I don't use any of my knives, even my many &qu...

Re: New stones for Fathers Day - what next?
I practiced on cheap $5 Kiwi knives made in Thailand. Inexpensive so I'm not concern about making mistakes. Dulls easily so lots of opportunity to sharpen. An edge is an edge, a good sharpener should be able to sharpen any edge not just a certain steel on certain days of the month after the 12.14th ...

Lots of good videos on sharpening online. All are pretty good. There are many technique and styles when it comes to sharpening. Learn what works for you and get good at it.
