Re: Blue and White Discussion
I do think I could tell the difference generally between white, blue and AS if I used these knives blind for a week or two. Using knives blind for a week or two sounds like an incredible skill :o (or a very dangerous experiment   ). If you could do that, I'm sure you could also tell t...

Re: Mirror polish on hagane
What do you use for medium, Ken? A flat plate with nano cloth? Is the friction low enough to "buff" a blade on that? Also - since I too am very interested in alternatives to a 6k - are there any other specific stones that produce a brighter mirror finish to the hagane (while keeping the ji...

Re: Possible hosted Makoto Sakura SG2 Gyuto 240mm passaround
I completely understand why you would want to try the stock handle. Once we have a quorum, I will put it to a simple vote with the majority opinion gets their way. What a nice word, quorum. Really fills out my mouth :o  Ok wise guy. Your vote doesn’t count. ;) I'll be happy either way. Quorum ...

Re: Possible hosted Makoto Sakura SG2 Gyuto 240mm passaround
Say no to a passaround? No way! I am in. I'd prefer to try the knife with the current handle first. I'll participate regardless, though. Obviously all carbon steel - what a wonder to hear that such things would not have rusted out of shape over a century and a half! Silt or no silt!

Re: What would you like in a knife block?
^^^I've thought about similar designs. It has a few minor disadvantages, such as how tight/close the handles are even if you alter the direction of each knife, as well as how the pressure point is continually stressing the blade-handle attachment, which, on some more traditional blades, is actually...

Re: Makoto Sakura SG2 Gyuto
Eh, 1.9 on spine...I'm out. Why are all the super steels friggin lasers? Would love to see an pm steel some meat on the spine and a nice convex edge. Similar to Yoshikane but more distal taper, or Tanaka less the 500 dollar price tag lol. I with you. I have way too many lasers anyway. Well, I have ...

Re: Makoto Sakura SG2 Gyuto
So what, are ant of these gonna go up for a knife-of-the-month sort of passaround? That Yoshimi Kato promised laser performance, but was too pretty to deliver. This one should be more... promising? ;) I would consider hosting one if there’s interest That's mighty generous, Ben! I keep hearing the p...

Re: Possible Okeya passaround
Alright folks, The collection has made it over to me in good order, and this passaround is a go. First impressions; The santoku is very light in hand. Came with a nice working edge, too. The single-bevel petty was not very sharp coming in. It looks well made, with a pleasant (if narrow) handle. The ...

Re: The Cleaver Diary
I've always enjoyed the old Iron chef show. For Cleavers, I especially like watching Kenichi work. Here's just one of his videos showing some of his work: jKTp8cvUihQ I can't find it offhand but there are some excellent videos of his competitors showing detailed carving skills. Amazing what detaile...

Re: Yahiko Shirogami Hairline 240 passaround
The Hairline gyutos are thinner than Mazaki brand knives from JNS. The thicker Kato'esque blades perform much better. Very good to know! I wonder if Mazaki will make any changes to the Hairline now that his name will be on them... :?: I wonder how the JNS version compares with the version sold by C...

Great insight, thanks! I'm glad to hear it as I was terrified with its low grind it would be a wedge prone beast. Thanks :) Approaching the knife with some respect, knowing that "she likes to be driven" as David stated, I found that being assertive brings beautiful results ;) No problem b...

Re: Who needs pointy knives?
It’s a dumb idea. Maybe they watched Ex Machina and were freaked out by that stabbing scene. Were you freaked out by the stabbing scene? Honestly, that was quite disturbing. Yes, the UK has gone off the deep-end with security related legislation. I wonder how that's working out for them... On a mor...
