I should have added that it's a question of how far off the apex the edge is, or perhaps time. If a strop or fine stone gets you to an apex quickly, you are touching up. If you need more to apex, you aren't just touching up - as the term implies you aren't looking to do much to get back to your idea...

Touching up, a opposed to going down to a mid-grit stone or even a full progression. So if a blade has lost that "fresh off the stones" feeling, a stropping or high grit stone (whatever the one you use for that blade) will take it back. To me that is touching up. Anything more than that is...

The Daovua Tall Nakiri has a belly - the front half is curved. This might work better for you. They aren't much for edge holding though.
The chuka-bocho is a chopper/push cutter and the proper grip is a three fingered pinch grip with fingers splayed out.

Cleavers are mostly, but not totally flat. That is the standard profile.
You can reprofile the end if you want, some nakiris are like that.

At the top end, the GUGC is wrong. The Shapton Glass 10K is 1.47 microns and the Chosera is finer than the Shapton.

Please let me know how that goes, so many budget knives are D2 or "D2" now. Not my favorite, the time it takes doesn't seem worth the edge it takes.
How do you feel about the wear rate?

There is also the Suehiro Cerax and Suehiro Rika that people give good feedback on.

Sorry, typed wrong. I missed the steel plate underneath the diamond layer.

I really dislike using regular diamond plate, but more edc knives are in S35VN now.

My reasoning for a 140 flattening plate isn't speed, but because a 400 wouldn't leave as aggressive a surface on the coarse stone.

It depends on what kind of knife you are looking for. Those are all good retailers, but their weakness is traditional knives.

If a hair dryer might do it, I wonder if I can do this in the oven at the lowest setting. To be honest, I probably won't do it for a while. I'm considering buying a stone that is on a base and I'm also tired of the base on my Suehiro Debado. I'm guessing some heat, then scrapping and flattening will do it. But I don't need a melty plastic mess or scorched plastic smell. Has anybody removed the base from a stone before? Any advice? Thank...
