Re: I need japanese knives
With your budget you can get some great knives. Really almost any knives that mark has will be head and shoulders ahead of what you’re currently using. I would suggest starting at a smaller price range and get something that is visually appealing to you. Look at the Kohetsu SLD series. They are grea...

Re: 210mm Nitro V Funayuki pass around?
Tim,
It was not fragile at all. Didn’t seem thinner than my Takamura. Both are stiff so that helps with the thinness. Had to pry it from my daughters hand to use it. She loved it.
Did not take the knives to any stones so don’t know how hard nitro is to sharpen.

Re: 210mm Nitro V Funayuki pass around?
First impressions Found the western style handle in the 210 interesting. Liked the texture feel. Didn’t get slippery as I expected it to. Due to very large hands really do not care for western handles. I did find by using a higher pinch grip it was ok. Using the three finger gauge, they seemed to be...

Received the knives today in good shape. Will start using them. Touch and feel just so far but like what I see.

Videos not showing up
For some time when using my iPhone to see the posts in this forum I have not been able to see the imbedded videos. Just blank space.
Anyone else having this issue. Or any suggestions on what I need to do to fix this?

Re: First Japanese Knife
First off, Thank you all for the help and advice! I pulled the trigger finally. Came here looking for one knife and ended up with three! Why you ask? My oldest son is getting pretty handy in the kitchen (does quite a bit of the cooking) and I'm looking forward to him using these three different sty...

You would not regret the second choice from Mark. Heck if a knife but then all from CKTG are great knifes. Go for the one that you like the looks of best.

I have an oval diamond sharpening steel. I just grin the peeler over it a couple of passes. Works well. Wouldn’t buy anything to do this but I had it and tried it out. Surprised me how well it worked.

Re: Advice on Wa Handle Change and Choil Modification
I can understand your disappointment in the handle but at the same time I like the oversized handle. I own the 165mm Gihei Blue #2 petty and find the oversized handle more comfortable than the, what I see as, undersized handles that usually come on a petty. Basically that handle isn't a +/- it's ju...
