Re: What did you cook today?

With temps in the low 30's and set to seriously plunge later in the week, I figured it was the right time to dig myself a path . . . https://www.ronniesuburban.com/photos/food/homecooking/thairedcurry/thairedcurry.21.0202.01.snowypath.jpg Snowy Path It really was nice out. I didn't even wear a jacke...

Re: Wok suggestions?

Edit to add: I have other pieces by Made In that I really like but the wok was a clear outlier for me. Their stainless clad cookware looks really nice. I would love a few pieces of that. I really like the stainless clad saucepans I have from them. And the small copper saucepan is also a keeper. I a...

Re: Wok suggestions?

In case anyone is still in the market for a wok, this just came back in stock. I haven't tried it personally but I heard good things about it in various foodie magazine reviews. https://madeincookware.com/products/blue-carbon-steel-wok I like the look of that Made In stuff, but it sure is pricy... ...

Re: What did you cook today?

This helps me cook for the most important person in my life, which has got to be half the joy of cooking, right? Absolutely, if not more. Keeping my family well-fed/happy/surprised has been a primary motivator over these past 7,000+ months of 'rona time. :D But in all seriousness, it's awesome that...

Re: What did you cook today?

I think the biggest learning for me last night was a more meta-point on meat substitutes. Think about what the ingredient 'provides', breaking it down. Chew? Umami? Salt? Then substitute with things - or a variety of things - that provide those attributes. I've been doing virtually all of my grocer...

Re: What did you cook today?

Looks like you made the most of that cut! Love the Anryu too. Pretty sure one day I'll have a moment of weakness and get a small petty like that. They look really fun. I also couldn't agree more on the flour in bag trick also. That's a useful little trick I figured out on my last round of deep fryi...

Re: What did you cook today?

Awesome Chappy! Agreed! I haven't had carrots with greens in that kind of usable condition in a long time. I'm envious and I really admire your resourcefulness. I probably should have steered clear of a particular discussion at another site about uses for eye of round because I got vortex'd and too...

Re: What did you cook today?

Easy lunch with a new ingredient I'm trying after seeing it recommended on Just One Cookbook, Kayanoya instant dashi. Supposed to be better than many and a viable alternative when time and/or energy is short. Based on the recipe book that came with it, the process is to tear open the tea bag then m...

Re: Who else save and used rendered animal fat(s)?

Yes I slice the "jelly" from the fat and save that separately in the freezer - all labeled "GOO" and what kind. I'm enjoying "butter schmaltz" lately. At thanksgiving I put compound butter under the turkey skin. My DIL was going to pour the drippings out and said - &qu...

Re: What did you cook today?

All aboard the Leftovers Express tonight . . . part of a ny strip, a few lamb chops (gussied up with some homemade five spice powder), some hot & sour soup and a salad with a quick, improvised sesame vinaigrette. Ez-breezy. Back to full-on cooking tomorrow. :)

Re: Who else save and used rendered animal fat(s)?

Always and almost all of it -- fat, juices, etc. I've got so many little tubs, containers and packets in the fridge, the family teases me about it. Once they solidify, I can vacuum-seal them in flat bags and store them conveniently in the freezer. I do my best to stay organized by keeping them label...

Re: Wok suggestions?

Ordered mine from Wok Shop three weeks ago and nothing yet, no shipping update, no response from seller via email, voice mail or browser inquiry....anyone else deal with wokshop before? I emailed a few days after placing the order when I didn't get a confirmation email. I actually got three respons...

Re: What did you cook today?

Good for you! Pickling is the final frontier for me. Need to get better at it for Japanese and Mexican in particular. Can't go wrong with Chinese Cooking Demystified generally, so I'm sure it'll be great. There's not much to vinegar pickling. Sometimes the hardest part is finding storage for (or fr...

D'oh! You're right, Jeff. The Kono is a Toggata GS+. I went ahead and corrected my post. Thanks!! :)

Re: What did you cook today?

That soup looks fantastic Ronnie. You might just have inspired me to try making that one. I'd always wondered on how that egg texture is achieved too, and now I know. Beautiful Kono also. Just drizzled it in while constantly stirring. If you like bigger pieces of egg, I suppose it should be stirred...

Re: What did you cook today?

I know the expression is overused, especially by me, but tonight's dinner truly was far greater than the sum of its parts. Had seen a few videos recently on Hot & Sour Soup and decided, "hey, I can do that!" Cherry-picked what I thought were the most useful elements from each and gave ...
