Re: What did you cook today?

Is that the same prop bottle of Topo-Chico you use in every picture? Or do you actually have that to drink at every meal? For the most part, I have one per day, at dinner. First time I had it was in Austin, TX back in 2015 and I immediately became a fan. Seems like they had it at just about every b...

Re: New bread knife

Really good for cutting all kinds of baked goods especially softer and more delicate items. Very much appreciate this review Ray. Seriously considering adding one of these. So a specific question: how does it perform on a more rustic loaf, something where the crust is difficult to cut into, perhaps...

Re: What did you cook today?

I have a picture and I thought I could insert it here, but it looks like I have to host it elsewhere, which I don't have. Sigh. I would swear I've done this here before, but can't find how now, so old age moment. You can use the Attachments tab below the posting dialog box to upload images here tha...

Re: Knives-n'-Cabbages

Ronnie, I absolutely love that knife. Don't use cabbage that much but I know it took care of bidness I agree. That photo provokes a FM B#2 itch that I'm increasingly sure will one day have to be scratched. Not now, but one day... Thanks. It's a pleasure to use. I actually bought it used, in the Cla...

I kinda like that new handle!
Me too but I don't need a third bread knife . . . or do I? 8-)

Awesome Kurosaki Ronnie! Oh and the food looks pretty good too... :D Thanks, Jeff. It's a well-known fact that Kurosaki knives improve your cooking by 35%! :P I've made this enough times since the pandemic started that I think it now ranks as a household staple: chile verde pork stew . . . https://...

Re: How I sharpen a knife. (Video Tutorials)

These videos are great -- interesting and really helpful. I know it's probably a cliche, but I'd love to see some brief paper cutting at end of them. I've become so accustomed to seeing that at the end of sharpening videos, it feels absent to me here. I realize it's hardly the end-all be-all measure...

Okay, beating a dead horse here but just by coincidence, I received an email from Made In this morning with the subject line Woks are Back in Stock! . Makes sense that this line of text appeared in the email: "And it's for more than just stir-fry. Our wok is excellent for quick braises, deep-fr...

Re: What did you cook today?

My schedule guided me into a quickie slow-cook dinner tonight. Got home from some errands in the early afternoon and had some work waiting, so after tasting a few really nice sandwiches from new-ish deli in town , I used the rest of lunchtime to quickly prep ingredients and get dinner simmering whil...

Oh geez . . . I first read that as wok of art and nearly spit water all over my keyboard!

I hadn't actually realised you'd pressed the button too. Six woks Ronnie now?? Joking aside, I can't wait to see what you turn out with it. Which one did you go for? Yeah, I couldn't resist. I bought the 16" carbon steel, round bottom with the looped, stay-cool handle (like yours). It's a beau...

Delivery from Newquist today. What a beauty! Mine arrived too and I agree. It's a stunner. I don't think I'll be able to test drive it until the end of the week but I can't wait to let 'er rip. My first foray into round bottom stir frying and I couldn't be more blown away. Was egg fried rice and a ...

Re: What did you cook today?

Grind it baby! Eye of round has a really good beefy flavor for burger. If you have some saved fat trimmings grind in with the round to make some really good burger. Only takes a couple ounces of fat per pound of beef. Pretty sure I have some vacuum-sealed A5 wagyu fat in the freezer, so maybe there...

Re: Wok suggestions?

That "Made In" wok is too small, too heavy and too expensive. For reference, my Chinatown-sourced carbon steel wok is 16" x 5.5", weighs 1812g and cost no more than $15 (purchased too long ago to remember exactly how much and probably more today) . The Made In wok is 12".5 ...

Re: What did you cook today?

Funny I bought two top round "steaks" the other day. I cut one in half then cut in into four and pounded the bejebese out of them with a tenderizer. then I marinated them in buttermilk/Cholula grlic sauce mix. I was going to make chicken fried steak, but time got away. I made stew with th...
