I was gonna suggest the Fujiwara FKM (which I've gifted, used, and sharpened - all good vibes), and the kanehiro that would slightly push your budget. Cedarhouse covered all the bases though, so I'll just say:

Kono MM B#2 210 [apparently one of the last few in stock], and a super useful pair o'tweezers [can't believe I waited this long to get them!]

Why boiling water and not a 210* oven or a heat gun? Boiling water can’t destroy a blade temper. Cheap ovens can swing by 100 F, that can ruin a temper. So, What kinda plastic bags? Ziploc style? Prep is everything. 1) make sure you can get a good dry fit, a little big is ok. 2) have gloves, all exposed surfaces taped or coated in board butter. 3) mix epoxy, I like 5 min, other installers like more time. 4) I use a 10 ml syringe, you can get them at the pharmacy for toddler oral med dosing....
