Hi Valery, Welcome to the forum, and congratulations on your first buy :) I think most of us would not overthink this. Moritaka's AS steal is known to hold acute edges very well. So apparently my wife - even before we married - had already owned jknives 😅 Just the other day my friend's *mother* tells me she's got a knife of mine.... The Sekisos are a lot of knife. I love Tanaka's grinds. How do you like the profile? The belly on that knife makes it one of my favorite recommendations for people coming over from German chefs. We got a set of Oneida about six years ago.

Balance is fine, the knives are surprisingly effective. Can't recall the name of the series though. Maybe something with the word "moon" or "star" in them.
