WTB - Konosuke HM

Happy to trade basically anything for an HM. Even if you aren't interested in letting one go, would just love to hear your experience of them.

Re: Konosuke Updates

Mark, could you please post some pics of the cleaver packaging? I would love to see the famously perfect Konosuke boxes on such a huge blade.

Also, any chance of a Kaiju update?

Re: WTS Kanehiro ginsan Gyuto, Nakiri and Petty (Australia)

In all honesty I don't think it's cool to publicly scold me for commenting on pricing when my comment responded to a prior post that innacurately said "These items were bought from CKTG, they are the exact items. The Gyuto sells for $300 US, plus shipping, when it is in stock." So why is ...

WTS Kanehiro ginsan Gyuto, Nakiri and Petty (Australia)

I have three knives for sale. All are BNIB (never used or sharpened). Great knives, Yoshimi Kato is a tremendous blacksmith, just never got around to using them. All knives are in Australia. I'll include $15 USD towards shipping per knife. Kanehiro (Yoshimi Kato) ginsan (silver 3) gyuto 240mm $285 U...

Re: White or Blue steel Gyuto?

Carbon is great. But sometimes I just prefer the lower maintenance of a semi-stainless like ginsan. It's so much easier for casual day to day use.

As a home cook, with a good board and being careful, ginsan serves me so well that I reach for the carbons less and less.

It looks good. It's not as flat (has more belly) as it originally was. I imagine this makes it more forgiving though.

Re: Dumb Newb Question....

Better to replace the handle I reckon. It's the perfect excuse, and you can get rid of that plastic.
