I think it would be hard to make your own suspensions. I bought some diamond powders for finishing blade surfaces (not edges), but haven't used them yet. They are crazy expensive! For me it would be the Kohetsu with the longer length. It's noticeable for me when cutting larger cuts of meat down. Both look like they would be stiff and not flexy, which is good! I like blue steels, but the SRK8 looks interesting with the Chromium added.

The original edge was on 3 micron/5000 diamond stropping compound after coming off a 1000 diamond plate. Curious to see how the toothier edge holds up! It should strop up to a finer grit pretty easily, too!

Yes, too steep of an angle and too much pressure can round the apex of the edge. Even with hard backed strops, leather has give still and if you put too much pressure and towards the edge, it can round the apex. I use the McCormick Rotisserie Chicken seasoning on a lot of stuff. Killer on chicken thighs on the grill! Chicken should be no match for the gyuto...lol.

Once the onion is halved, peeled and the stem end left intact, do 2 or 3 horizontal cuts through it, then several vertical cuts, going almost to the stem each time. Then chop straight down. Gives you a nice dice.

Yeah, there was a grounding issue with the first batch too, so they sent out a grounding wire to the customers. They need to figure out how to cool the motor without sucking in the dust and metal shavings. Thats why the TEFC motors and real VFDs are the best way to go. I wonder if someone can modify...

With starting with thinner stock, the area behind the edge usually is thinner and the thinness goes higher up the blade, too. There is less spine to push through the ingredients as well. When I do a convex, the spine often gets a bit thinner, too, so 3/32" stock doesn't always end up 3/32"...

I use mineral oil on boards and pure tung oil on kitchen knife or wood handles. Synthetic handles get pure stuff or the polymerized stuff, depending on my mood.
