I have a 240mm Gyuto, 165mm Nakiri and 150mm petty in the Tanaka Sekiso series, love them! I also have a Blue #2 Kurouchi 210mm gyuto that CKTG carried many years ago that I completely reground to be more like the Sekiso series grind wise and it works great. Your welcome! I need to shake out the cobwebs a bit, too. Haven't been keeping up with the cool new knives lately since I don't do rehandles anymore. Still really miss it! But I am back to cooking at home a lot, so I get to actually use the knives I have!

Correct, the carbon laminates are also often premade in a mill, just like the stainless. Some hammer them down, others get the sheet in the thickness they need from the start. Tons of ways to do it! A takashima koppa maybe a good way to try a Natural stone? It works for kasumi finishes and also edge finishing.

I found a strop maintains the edge pretty easily, or using a 3-6K stone and a couple of passes. Maybe pick up a finer stone or strop to use for touch ups? I have a Nakayama deep stratum lvl 4.5 j nat I got for straight razors a few years back from MetalMaster in Japan for sale. I used to use it with some of the CBN slurries I got from Ken for SR shaving. I think I used the 1/4 micron on it.

I have several Tanakas from the Sekiso, R2 and Blue Kurouchi and played with a Ginsan as well that I did up for a raffle prize. Tanaka makes great blades!

How about a funayuki? I have lots of thin pieces (1/8" thick, 3 or 4" wide and 18 or 24" long or longer in poplar) of various woods that I used to use to make 3 piece sandwich sayas (using soft basswood as the liner piece). Lots of plain poplar, but some walnut, curly maple and other woods, too.

I have a 210 Tanaka Blue #2 clad knife for sale with a handle I made for it several years ago. I reground and thinned the whole blade so it was more like the Sekiso series grind.
