Re: If you had only one knife to bring to work
People don’t use my knives, if for some reason they think it’s alright they will not do it again. No matter where your at on the totem pole people need to respect your tools. A lot of cooks aren’t exactly the cream of the crop of humans, anybody can start off working in a kitchen with zero credentia...

Re: Help with rust/discoloration Goko White

Most of my carbons don’t have the lovely blues and whatnot people post pictures of. They’re mostly a crappy looking orange that will eventually go to a...

Re: How much of a jump is it going from a DE to a straight?
I went from using regular straights to disposables, of course after the Gillette Mach whatever. Never did a DE till I got a little lazy and just wanted to try it. I was also into the fancy smancy creams/soaps, brushes and disposable straights. Making a good lather goes a really long way imo. I got l...

Re: You know you're a chef when...
When 212 degrees is room temp, 350 degrees is warm, and 600 degrees is hot. And burns that dont blister instantly aren't worth a thought. And the only thought is to make sure it doesn't pop. Not sure if this happens to anyone else but I have to remember to drain my burn blisters because my callouses...
