And I thought my Victorinox where all that until then. Went to CKTG to buy some sharpening stones and tripped and fell into a very deep rabbit hole! :shock: :ugeek: Jeff, do you still have that HD2 perchance? Always fun to see an old knife that's lost some mass but remains a cool killer no less.

Reckon this a rather popular response: Tojiro DP, the 180mm gyuto, specifically. I've since gifted it to my sister and am always glad to see it being used and loved over there.

For home cooking, a 210 (or slightly longer) is really in the sweet spot. They're big enough to cut most things but don't require a ton of space.
