Many people use a folder for this, such as Kerchaw, Spyderco or Benchmade. I used to stick purely to fixed blades such as those posted here, but have recently been more flexible. Even fieldwork can be done with a good solid folder that has a strong mechanism.

Nice! Looks remarkably similar to construction of Yu Kurosaki petty knives. Good luck with this.

Not sure if you're still looking, but I have used Nigara Hamono gyuto in the 210mm size and it is great. They are san mai forged.

That's a beautiful knife. No scratches really visible.
