I think its a great idea to keep it cheap, its a very good basic design. i think everybody can agree we hate the new logo :lol:

it would be very nice if CCK go back to their old logo. handle wise, I think the short barrel handle suits this knife the best, would stay with this kind of design. maybe a nicer wood? anyway the best cleaver handle design is the simple one, like sugimoto. agree about the lacquer coating, its a pain...

in some cases the choil doesn't tell the big picture. but as you said its wedging so i suspect its need to be thin. i guess you can thin with focusing on the heel but you should thin it along all the edge length. seems like the edge touched ups few times without thinning, so i would advise you to th...

nice convex but its does look on the thicker side BTE.

i would try to thin it a little to make it zero grind and put a fresh micro bevel, if its still too thick you can thin it more.

the key is to be consistent and not rush things up, take your time when thinning.

yeah i agree the gihei feel sturdier than the toyama\watanabe. the watoyama are thinner behind the edge and taller, the steel is very hard and could be chippy. they are well worth their higher price tag and could be your daily driver for many year. gihei steel is also very nice you can get it very s...

this one made of African walnut, feels very kind to the edges as well.

my pervious was Boos edge grain maple, can tell it was harder wood.
