You've got a pretty good range of existing makers/steels, thinking about which of those you like the most might help. Surely you prefer some over others (tojiro)?

I haven't seen it discussed and it's only a 210, but looks it could be an alternative for anryu hammered that is constantly out of stock. Looks very similar.

Sickle doesn't seem too far off from being a drawknife. There is a lack of availability/makers of hand forged quality woodworking green wood tools, maybe they could adapt to that market? Sounds like once again the answer is “both”. Maybe pick a smaller non gyuto to try in the kohetsu nashiji line might be my plan.

Rob -> Unless you pull a rabbit out of a hat with a pic of some knife out of left field, I don't think you are seeing what you think you are seeing. Most likely you are mistaking the bevel transition from the edge to the cladding as a extra layer of steel based on it looking different in some knives...

The correct answer is victorinox, you can get a decent size knife for cheap and have the rest of your budget left to spend on japanese knives!

I also was looking for reviews on the kohetsu blue2 nashiji compared to the yahiko series. From what I understand they are both cktg house brands and both are made in Sanjo. You said nimble and already have a comparable length bunka, so I’m guessing you want something not super tall. For travel I’d want something stainless clad and a longer lasting carbon edge. Best option in stock is the kohetsu wa handle AS petty.

Not too many stainless clad in stock for a nakiri, but I second the harukaze G3

I would say if you’ve never owned carbon steel, get one to try. Get a cheaper one like kohetsu nashiji or yamashin or yoshimitsu fugen and a decent sharpening stone. See how you like it vs the stainless everyone is familiar with.

I feel like yamashin and fugen maybe used to be cheaper and more in the project price range. Now they’ve moved in price closer to kohetsu and harukaze, which makes them less appealing in comparison.
