Re: Gift Registry

Honestly my extended family has been using "amazon lists" as a universal gift registry for years. It used to be real easy to link to external sites, they made it a little more difficult a few years back, but you can still do it. Basically they have an "idea" text where you copy t...

Re: What nakiri will blow my socks off?

You've got a pretty good range of existing makers/steels, thinking about which of those you like the most might help. Surely you prefer some over others (tojiro)?

Re: Swtiching from a Wusthof

A different suggestion might be this Tsunehisa ->

https://www.chefknivestogo.com/tsassagy21.html

I haven't seen it discussed and it's only a 210, but looks it could be an alternative for anryu hammered that is constantly out of stock. Looks very similar.

Re: Japanese sickles

Sickle doesn't seem too far off from being a drawknife. There is a lack of availability/makers of hand forged quality woodworking green wood tools, maybe they could adapt to that market? Hand forged drawknives, scorps, spoon knives and especially adzes are of extreme scarcity for US woodworkers. Exi...

Sounds like once again the answer is “both”. Maybe pick a smaller non gyuto to try in the kohetsu nashiji line might be my plan.

Re: What is the purpose of the middle layer in a san mai blade?

Rob -> Unless you pull a rabbit out of a hat with a pic of some knife out of left field, I don't think you are seeing what you think you are seeing. Most likely you are mistaking the bevel transition from the edge to the cladding as a extra layer of steel based on it looking different in some knives...

When you say Echizen shipment, does that mean you'll get other maker knives as well such as masakage, kanehiro, mokoto, etc?

Re: Favorite chefs knife??

The correct answer is victorinox, you can get a decent size knife for cheap and have the rest of your budget left to spend on japanese knives!

Re: First Carbon Knife Contender - Kohetsu Blue #2

I also was looking for reviews on the kohetsu blue2 nashiji compared to the yahiko series. From what I understand they are both cktg house brands and both are made in Sanjo. I didn’t get much of a response, which is surprising as the blue2 nashiji looks like a great value if you like that finish sty...

Re: Petty recommendations please

I do have to say with someone mentioning the victorinox, my two petty knives are my only semi-regret with the japanese knives. I do still like them, but I definitely could have just stuck with my $7 fibrox victorinox petty knives. For sub-100mm I've got a wa-petty anryu and a yo-petty harukaze and b...

Re: Petty recommendations please

You said nimble and already have a comparable length bunka, so I’m guessing you want something not super tall. For travel I’d want something stainless clad and a longer lasting carbon edge. Best option in stock is the kohetsu wa handle AS petty.

Re: looking for a santoku or nakiri

Not too many stainless clad in stock for a nakiri, but I second the harukaze G3

If you were to dive into the carbon side of the world, I would take a look at tha yoshimitsu tall nakiri

New knife thread - images gone

Looks like the last couple images disappeared in the "Show us your new knife" thread. At least two of them I did actually see yesterday, so something must have happened after that.

Sanjo - Kohetsu vs Yahiko?

I’ve read about regional tendencies of various knifemaking parts of Japan. Sanjo has a reputation for more heavyweight spine thickness from what I read, along the lines of Gihei and Mazaki. I see yahiko is from sanjo, but kohetsu also has some models that list sanjo. Why are they separate house bran...

Re: How much does the steel matter

I would say if you’ve never owned carbon steel, get one to try. Get a cheaper one like kohetsu nashiji or yamashin or yoshimitsu fugen and a decent sharpening stone. See how you like it vs the stainless everyone is familiar with.

Re: looking for a good project knife

I feel like yamashin and fugen maybe used to be cheaper and more in the project price range. Now they’ve moved in price closer to kohetsu and harukaze, which makes them less appealing in comparison.
