It’s too bad that Makoto Kurosaki doesn’t make AS clad knives anymore. When Mark has them in stock, the Kato AS line with the stainless clad nashiji pear skin skin finish are good too. I think a better option would be the Steelport chef’s knife. It’s about $400 bucks, but I like the in hand feel and they do a great job on the heat treat, so it’s very easy to sharpen.

If I were you I’d find her a masakage nakiri. I love the height and they are always some of the sharpest knives out of the box. Another good choice if on a budget would be one from the Haruyuki or Tsunahisa line. They are made from great steels and usually have a great esthetic. In terms of bunkas, ...
