Re: Need help figuring out a main course.

I just made Provençal Short Ribs with Olives and Herbs (https://www.epicurious.com/recipes/food ... rbs-387449) and it was phenomenal. I made it a day ahead and it warmed beautifully.

Re: Sujihiki recommendation, please

I have a Konosuke HD2 300mm suji and it checks all the boxes you list. It's semi-stainless, so you don't need to immediately wash it after use, it's wicked sharp and it's ideal for slicing cooked meats (cutting cooked brisket is it's #1 task in my kitchen). A great knife! A brilliant knife indeed. ...

Re: Want to get a cast iron pan

I considered taking a grinder to a cast iron pan to smooth out the interior, but after watching a couple Youtube videos, I decided that was just too much work and wasn't really guaranteed to produce a flat (as well as smooth) surface. If I needed to cook delicate proteins that I didn't want to stick...

Re: Want to get a cast iron pan

What sort of things do you plan to cook in the cast iron pan? For searing proteins, I like my Lodge pan just fine. It has a thermal mass that the smooth, lighter cast iron pans don't have. I'm less crazy about the Lodge when I need something closer to non-stick. For that, I have a smooth-surfaced an...

Re: Damascus etch making knife sticky

My Masakage Kumo is heavily etched and it really dragged through food. I didn't really do anything special except use it, and within a week or two, it was gliding through food as smoothly as any knife. Even better, it retained the beautiful etched pattern, so it was a win-win.

Re: All Around Chef's Knife

If you are OK with a blade with a reactive core, the Kohetsu Blue #2 Nashiji 210 gyuto would make a really nice all-arounder. I think these knives are an outstanding value.

https://www.chefknivestogo.com/kobl2nagy21.html

There is even an 'extra tall' version if prefer a tall blade.

My most used knife of ‘23 would be my Terayasu Fujiwara 210 Denka gyuto. In second place would be my Masakage Shimo 240 gyuto.

Re: Impulse buy? Red light or green light

I'd go for the HD2. They are a bit more lasery and are wonderful cutters. They also are nice for when you want to use a knife with a less reactive core steel. I have a couple HD2s (a 270 gyuto and a 300 sujihiki) and they are beautiful knives that hold a very keen edge. Also, as mentioned above, if ...

Kohetsu Blue #2 Nashiji gyuto - https://www.chefknivestogo.com/kobl2nagy21.html

Similar to the post above, but a gyuto rather than a bunka. These are nice knives and a good value.

Re: looking for my first Petty

I think of a couple types when looking at petty knives... one kind are like small gyutos, with some knuckle clearance on the cutting board (e.g., https://www.chefknivestogo.com/hagisitsdape.html) and the others are more sujihiki-like, with a slightly more slender blade and less clearance (e.g., http...

Re: Greetings! New member here

I have a Yuki 240 gyuto and it's a very nice knife... it's not a laser, but it's decently thin behind the edge. It's pretty close in weight to the Kurosaki AS. (My only Kurosaki knife is a Masakage Shimo 240 gyuto and it's also shirogami, like the Yuki).) All things being equal, I'd probably prefer ...

Re: clinging to the side of the rabbit hole. Gyuto 240mm recommendations

I think I unconsciously adjust my cutting technique to the knife I’m using. With lasers, I tend to do a bit more of a push cut, especially on denser or stickier product.

Re: clinging to the side of the rabbit hole. Gyuto 240mm recommendations

One rarely hears of people who are dissatisfied with their Kono HD2. I have a couple, a 270 mm gyuto and a 300 mm sujihiki, and they are very nice knives. I was not a big fan of the machi gap at first, but I really come to appreciate it.
