I just made Provençal Short Ribs with Olives and Herbs (https://www.epicurious.com/recipes/food ... rbs-387449) and it was phenomenal. I made it a day ahead and it warmed beautifully.

I have a Konosuke HD2 300mm suji and it checks all the boxes you list. It's semi-stainless, so you don't need to immediately wash it after use, it's wicked sharp and it's ideal for slicing cooked meats (cutting cooked brisket is it's #1 task in my kitchen). I considered taking a grinder to a cast iron pan to smooth out the interior, but after watching a couple Youtube videos, I decided that was just too much work and wasn't really guaranteed to produce a flat (as well as smooth) surface. My Masakage Kumo is heavily etched and it really dragged through food. I didn't really do anything special except use it, and within a week or two, it was gliding through food as smoothly as any knife. Even better, it retained the beautiful etched pattern, so it was a win-win.

If you are OK with a blade with a reactive core, the Kohetsu Blue #2 Nashiji 210 gyuto would make a really nice all-arounder. I think these knives are an outstanding value.

My most used knife of ‘23 would be my Terayasu Fujiwara 210 Denka gyuto. In second place would be my Masakage Shimo 240 gyuto.

I'd go for the HD2. They are a bit more lasery and are wonderful cutters. They also are nice for when you want to use a knife with a less reactive core steel. I have a Yuki 240 gyuto and it's a very nice knife... it's not a laser, but it's decently thin behind the edge. It's pretty close in weight to the Kurosaki AS. I think I unconsciously adjust my cutting technique to the knife I’m using. With lasers, I tend to do a bit more of a push cut, especially on denser or stickier product.

One rarely hears of people who are dissatisfied with their Kono HD2. I have a couple, a 270 mm gyuto and a 300 mm sujihiki, and they are very nice knives. I was not a big fan of the machi gap at first, but I really come to appreciate it.
