Makoto Ryusei AS 240 btw. Same here, but my blade road above the core steel is still relatively new looking. Depends on ingredients, time... Easy to control, and comes right off with Barkeeper's Friend or similar, if you prefer a cleaner look. Perfect. Yeah I don't mind the patina on the core steel...

WTB Your inexpensive carbon steel gyuto or similar

Have an old inexpensive knife you don't use anymore? Let me know. Does't need to be in perfect or even great condition, but preferably not rusted. PM with offers if you think you have something that might fit the bill.

EDIT: Something like a used Tojiro Shirogami, Okeya or similar would work.
