Re: Salt suggestions

After using it for several weeks I agree on salt intensity. I have had to cut back on what I was used to eyeballing.

Re: Patina photos

Makoto Ryusei AS 240 btw. Same here, but my blade road above the core steel is still relatively new looking. Depends on ingredients, time... Easy to control, and comes right off with Barkeeper's Friend or similar, if you prefer a cleaner look. Perfect. Yeah I don't mind the patina on the core steel...

Re: Taking the dive... 210 Gyuto

Congratulations Looking great. Your discussion about getting this knife inspired me to look into it, and I recently also ordered one and received mine last week. You are going to be very happy. And thank you. Awesome. Glad you were able to grab one too... I was surprised with how fast they sold out...

Re: Beater practice recs and thoughts?

1st recommendation - practice on a white steel blade (carbon steel) instead like the Tojiro shiro gami. MUCH better learning experience. Much. I looked that Tojiro up... Not bad priced but would be great to find a used one for this purpose. I posted in the classifieds to see if anything like this c...

WTB Your inexpensive carbon steel gyuto or similar

Have an old inexpensive knife you don't use anymore? Let me know. Does't need to be in perfect or even great condition, but preferably not rusted. PM with offers if you think you have something that might fit the bill.

EDIT: Something like a used Tojiro Shirogami, Okeya or similar would work.

Re: Beater practice recs and thoughts?

I've actually been thinking about getting a cheap carbon knife to abuse, maybe even purposefully chip, just to practice on. Just haven't found one. I'll look up okeya as mentioned above.
