Steel Recommendation

What Japanese steel/knife brand is close to German steel HRC? Why? Investigating a malleable Japanese blade steel to handle things that “most” Japanese steel should not see (bones, semi-frozen proteins, woody stems etc). This will be used by a young, budding new cook. Or, should I just purchase a Vi...

Knife Type Name Pronunciations

There are three, J knife type names and one finish type that (seem) to have several pronunciations. I ran the Googler and there is not a definitive answer for each. The types in question (for me) are: Kiritsuke Honesuki Konosuke Tsuchime Is there someone on this forum, who speaks fluent Japanese, wh...

Re: Impulse buy? Red light or green light

I decided to go with the Kono HD2 240mm with the Laurel handle. I've never used a 240mm knife so it makes sense to give one a whirl on the cutting board. Thanks to everyone for your feedback 👍

Re: When will you be getting x knife back in stock?

@STPepper9, I purchased an Anryu B#2 Hammered 210mm gyuto in Jan '21 and the 150mm petty in June of '22. Mark said both knives were made by Ikeda. The gyuto has a different kanji than the petty. I can send you pics if you would like.

Impulse buy? Red light or green light

Konosuke HD2 Gyuto 210mm Laurel octagonal handle My main kitchen knife is an Anryu Blue #2 hammered. I am an average home cook enthusiast (I don't want to just feed myself) but the Anryu serves all of my needs. Do I gain appreciable performance over the Anryu with the Konosuke HD2? Would this be mor...

Hi Bioform;

If you have the counter space, another option to look at is the Tiger Wood cleaver stand. It's what I use for my small CCK cleaver.

Master Class Online Cooking Classes

I'm curious if anyone has a subscription for the lessons and if so, is it worth it?

I've settled on the knives I use, now I want to start improving my cooking game.

Petty Selection

I'm considering ordering a petty knife (not a need, just a want). Which would you choose: Anryu 150mm B#2 Hammered or the Gihei B#2. I love my Anryu Gyuto so my eye drifts towards that petty brand but I like the extra blade height of the Gehei.

I've never seen grey Wenge before. I've had a couple longbow risers made from Wenge where the body is a dark brown with deep black figured stripes.

I went with the CCK SS chef's knife cleaver. I do enjoy it and use it on a weekly basis. My favorite knife continues to be the Anryu hammered B#2.

Spatchcocking tool

My 18 year old flew from the nest a couple of weeks ago. She came by last night and needed my kitchen shears. I told her to keep them and that I'll buy another. The question I have...is there a good Japanese knife replacement for the kitchen shears...which was used primarily for removing the backbon...

Robstreperous...I am definitely more of a push cutter than anything else but I do rock cut (think scallions and garlic). Thank you for your insight 👍 I was content using the same German knife for 30+ years and now look at the granular nit-picky person I have become, LOL.
