I decided to go with the Kono HD2 240mm with the Laurel handle. I've never used a 240mm knife so it makes sense to give one a whirl on the cutting board. Thanks to everyone for your feedback

@STPepper9, I purchased an Anryu B#2 Hammered 210mm gyuto in Jan '21 and the 150mm petty in June of '22. Mark said both knives were made by Ikeda. The gyuto has a different kanji than the petty. I can send you pics if you would like.

If you have the counter space, another option to look at is the Tiger Wood cleaver stand. It's what I use for my small CCK cleaver.

Petty Selection
I'm considering ordering a petty knife (not a need, just a want). Which would you choose: Anryu 150mm B#2 Hammered or the Gihei B#2. I love my Anryu Gyuto so my eye drifts towards that petty brand but I like the extra blade height of the Gehei.

I've never seen grey Wenge before. I've had a couple longbow risers made from Wenge where the body is a dark brown with deep black figured stripes.

I went with the CCK SS chef's knife cleaver. I do enjoy it and use it on a weekly basis. My favorite knife continues to be the Anryu hammered B#2.

Robstreperous...I am definitely more of a push cutter than anything else but I do rock cut (think scallions and garlic). Thank you for your insight I was content using the same German knife for 30+ years and now look at the granular nit-picky person I have become, LOL.
