Re: 3 knife order , is this is a good combination

I agree with Fisherman, skip the VG10 steel and go with a good carbon knife. My favourite is SG2 mainly for looks. Otherwise solid choice.

Re: White or Blue steel Gyuto?

My personal preference is white. It's personal preference really. Keep in mind that the steel is only one of a few factors. There is no one knife to rule them all, one knife to to find them, one knife to bring them all and in darkness bind them. Like most of us on this forum, you'll soon have a few ...

Re: Any point in 12k?

I seldom go beyond 3-4K. have a few 8k stones but don't use them much. For practical everyday use this is all I need. Any higher grit is just for kicks and show.

Re: Which Stones??? (a tip for novice)

Naniwa over King for me. Spend the money on good stones. As with any tool, spend money on quality. They are not that expensive and are a long term investment. If you have to, wait a month or two and save your money to buy a better stone.

Re: Which Stones??? (a tip for novice)

I do a lot of camping, hiking, skiing and most anything outdoor. Have lots of Mora knives along with a bunch of other "bushcraft" knife. Personally I would not sharpen an outdoor knife beyond 1000 grit. I used to go up to 8000 grit for my Syderco knives (just for kicks) and find, as expect...

Re: What's your choice of "The most pleasurable stone" to use?

Suehiro Rika for me. Smooth silky feel. Cuts well and polish to a nice finish. It is all down to personal preference. I'm sure many others will have a different favourite stone and that's OK. The purpose of this tool is to get an edge sharp, how that is achieved doesn't really matter.

^^^No, there is a location in Vancouver but not Victoria. Mail in sharpening, AFAIK, is sent to the Calgary location.

Don't know of any sharpening service in Victoria as I live in Calgary. But I do recommend Knifewear in Calgary.

Just got that stone a few months ago. I really like it. I've used it a few times at home to test but the intended usage for this stone is part of my travel kit.

Re: Mark told me to post here so here I am!

Mark has put a lot of effort, blood, sweat and tears into creating a successful business. This is coming from someone who is an outside observer and have never dealt with the man but have a lot of respect for him. It's good to see someone working hard being successful and also contributing something...

Re: The metaphorical fork in the road: Freehand vs Guided System Sharpening

I got started with sharpening by going the guided system route as, being a technically minded person, I thought it would be easier to learn. I wanted something that is good enough for my cheap knives. Back then I was not into knives, knew less about steel and couldn't tell you the difference between...

Re: Honing hard steels: pro and con

Yes different grit rods will behave and perform differently. Pressure plays a huge and critical role in sharpening along with angle and consistency. Hard to control all 3 with a rod. Rods are good for impressing the ignorant with the bashing and arm gestures.

Re: Honing hard steels: pro and con

I got 4 of those Knifewear rods. Also have a few rods from other sources. They are not any more special or different then each other. Except that yes the grits are different. I like having the coarser white rod in the kitchen for softer steel knives (Kiwi, Victornox, Wusthoff). I got the rods for ch...

Re: How to sharpen a Moritaka AS knife

I will need to re-sharp the knife with micro bevel at 9.5 degree per side and if it will be still not as sharp as she dreamed of, then I will sharp the knife with just 5 degree per side without any micro bevel. Yeah carbon steel and Japanese knives are addictive. Not just in using it but also in sh...

Re: Honing hard steels: pro and con

Honing on a ceramic rod can be done, if done properly. That is, no bashing the blade against the rod to impress the girls.

As I said I've since moved on from honing to stoning or stropping for edge maintenance. Why? Because it's faster, more precise, more control and more consistent.
