I agree with Fisherman, skip the VG10 steel and go with a good carbon knife. My favourite is SG2 mainly for looks. Otherwise solid choice.

My personal preference is white. It's personal preference really. Keep in mind that the steel is only one of a few factors. I seldom go beyond 3-4K. have a few 8k stones but don't use them much. For practical everyday use this is all I need. Any higher grit is just for kicks and show.

Naniwa over King for me. Spend the money on good stones. As with any tool, spend money on quality. They are not that expensive and are a long term investment. If you have to, wait a month or two and save your money to buy a better stone.

I do a lot of camping, hiking, skiing and most anything outdoor. Have lots of Mora knives along with a bunch of other "bushcraft" knife. Personally I would not sharpen an outdoor knife beyond 1000 grit. I used to go up to 8000 grit for my Syderco knives (just for kicks) and find, as expect...

Suehiro Rika for me. Smooth silky feel. Cuts well and polish to a nice finish. It is all down to personal preference. I'm sure many others will have a different favourite stone and that's OK. The purpose of this tool is to get an edge sharp, how that is achieved doesn't really matter.

^^^No, there is a location in Vancouver but not Victoria. Mail in sharpening, AFAIK, is sent to the Calgary location.

Don't know of any sharpening service in Victoria as I live in Calgary. But I do recommend Knifewear in Calgary.

Yes different grit rods will behave and perform differently. Pressure plays a huge and critical role in sharpening along with angle and consistency. Hard to control all 3 with a rod. Rods are good for impressing the ignorant with the bashing and arm gestures.

I got 4 of those Knifewear rods. Also have a few rods from other sources. They are not any more special or different then each other. Except that yes the grits are different. Honing on a ceramic rod can be done, if done properly. That is, no bashing the blade against the rod to impress the girls.
As I said I've since moved on from honing to stoning or stropping for edge maintenance. Why? Because it's faster, more precise, more control and more consistent.
