Re: Fixing a tip

When I asked for advice on this, Ken suggested that I use the dude of my corse stone. Worked great with no risk of leaving a gouge on the top of your stove.

Re: What did you cook today?

Stopped at the store on my way home and some basic steaks were on deep discount, so I took the bait. I though the sear looked nice, so I decided to take pics. Sadly, I left them tented just a touch longer than intended, but the centre was still the way I wanted it, so not a complete loss. I used my...

Re: Carving knife and meat trimming knife

I have a feeling you are going to get more knives, more knives are always a good thing; however, don’t be surprised if at some point after running some old beaters through a full progression sharpening if they perform exactly like what you are pining for. This was my experience after I bought a set...

. They say I'm too particular. My issue with her using the T-Fal is that she cleaned it up while still pretty hot and rinsed it with COLD water -- but I just bit my tongue since they are cheapish pans. I feel your pain. I had a 240 Anyru get severely misused. I was nice and explained that my knives...

Took me over a year to get to this bread knife re-handled.

Ironwood scales. Tung oil finish. eBay “custom” pins.

Excellent value when you can get a factory second for a huge gap in the OEM handle and you intend on replacing it anyway! Total investment on this knife is about $50
Looks great 👍

Re: Stone/combo stone for a beginner?

You’ll get a lot of different advice. First question is these stones for the knife you bought. If so you will not need a course stone. A 1000 grit of 2000 grit is all you will need to keep it sharp. I really like the shapton pro. I like the convince of not having to soak my stones. Just get it out a...

You’ll be super happy with either one. Just pick the one that like the look of best and pull the trigger. If you’re like most of us it will not be your last purchase, these quality knifes are addicting.

Re: Gyuto recommendations for first Japanese knife?

I would get the p60 and a shapton 1K Stone. I think that knife is a great first or 5th knife from what I have seen other people write. By p60 do you mean the kanehide? Also I don't know much about sharpening, but wouldn't a 1k stone alone not be enough to finish the blade? Thought you needed a high...

Re: Why are we busy?

In my case it was supporting small business. We have actually been eating out more often than normal to support the local restaurants.

In Mark’s case I order a knife along with a case of masks to support his efforts in providing the masks at his cost. Such a elegant effort to help everyone.
