What you guys use to take the tops and bottoms off of onions?

Apparently there is a guy that comes once a week and sharpens all the knives in the soup kitchen. Personally I think that guy is using some kind of machine that doesn't work right.

The length is shorter than the large CCK but has the same height. Also I don't keep knives I'm not using and the Zhen would be hard to resell. The Zhen it's not really a sought after knife, but like I said before it's a nice home knife since I live in apartment and don't have much space and love us...

I have the large Zhen Damascus VG 10. The edge out of the box is good but the edge will roll on you if you are not careful, probably has something to do with the heat treatment. But after sharpening it on my own stones the edge held up better. I would not use this knife in a pro-environment because...

It depends on what you want to do with the cleaver. There are thin cleavers for slicing and chopping vegetables... and there are thick spine cleavers for breaking bones... and you can't mix them the other way around. Sometimes I fry sliced Anaheim peppers in a cast iron skillet and they start popping also. I think the phenomenon might be related.

I don't know if you guys are aware but there is a new blender technology. Blending in a Vacuum. If for example you are blending an apple milkshake in a vacuum then the apples won't go brown.

To point out, I think the same people also say that the heat treat on the shun cleaver isn't very good either.
