While I use my 210 and 240 Gyuto’s about the same amount of time, there is one gem that I picked up here that’s used daily and that’s a Konosuke Fujiyama 210 petty. I know it’s not in stock very often but if you find one it’s a great blade.

My first Japanese knife was a Konosuke HD2 240mm Gyuto, my last one that I use most often is a Shigefusa 240mm Gyuto.

Field also has a Facebook page for users of their skillets and the people from Field comment on that site. Most people that post pictures or comment on Field Seconds indicate that the flaws are very minor. Right now Field is giving away a #6 skillet (my favorite) with the #12 (my pizza skillet).

One comment I would like to add is that testing hardness in the RcH scale is a bulk measurement not an edge measurement. It is good as an approximation on a section of steel but it is not a direct measurement of a thin section such as a blade edge section,

I cut a piece of wood to fit into my Shapton Pro plastic stone holder boxes, hand plane it smooth and use 0.75 CBN Slurry on it. I've used cherry wood, mahogany and soft maple and they all work. I have given several of them away and use whatever wood is on my shop bench when I need a new one.

I have a 270mm W#2 Kagekiyo Sujihiki but, I would prefer using a long Gyuto for brisket. I have a 300mm carbon steel Western or if I'm cooking a smaller flat I use my 240mm Gyuto.
