Couldn't the rust/copper colors be from carbon steel or iron left on the plate from flattening bevels?

The Pros are just as likely to crack as the older Chosera though the odds for either doing is actually pretty low. If you like the 3k with the base don't fear buying it and the base will actually make it less likely for it to crack. Any "spider webbing" on the surface does not affect performance.

I definitely won't lecture you on safety measures, I'm sure you know more on what steps to take than me. I will just agree with and reiterate the idea that if you start to get overwhelmed just shut down online ordering until you get caught up. Just put up a banner stating that you are not taking new...

Chicken thighs, raining like hell so just roasted them in the oven for 30 minutes. Steamed brussel sprouts and some noodles with a simple Alfredo sauce.

The best answer is "why chose", get one to ten of both. ;)
Sometimes all I need and prefer is a 210 and some jobs are much better suited for a 240.

This is a little softer than the average Japanese knife which makes it more forgiving. Hard to beat for the price.
