Interesting observation today

I was going to break down and portion a boneless leg of lamb today, but my boning knife was so dull I couldn't cut myself with it. It's a blade from Alabama Damascus that I did some reshaping on then made a new handle for. I started with a Shapton glass 1k, then dropped to a Ghesshin 400 Hmmm . . . ...

Re: What did you cook today?

Yesterday was Greek Easter - I've been celebrating it for 50yrs. We had friends over and I made: Spanakopita Lamb Kofta String beens Orzo https://lh3.googleusercontent.com/pw/AJFCJaWobtEgyAKa1mLp2urv1Dj8qZBeCANS9Atvzrxujb62tof8jS10k63lalRfjn1NCP_-SIN4jdoRV3Fc3s7zqzLlBzsgROdGfzOB3RH7SsFe8E_BxdXoWV3-v...

I make damned good biscuits thanks to https://www.youtube.com/watch?v=d348FGXomg0 Unfortunately after trimming 4 bunches of collard and mustard greens along with onion/carrot mirapoix. A bullion cube is a cup of water and bury a smoked turkey wing and an hour later you have greens. - absolutely deli...

Re: What was your first good Japanese knife?

My first Japanese knife was aa Shun 8" chef - I never bonded with it I didn't like the European shape. My first "real" Japanese knife was a Tojiro 240 W#2 ITK gyuto. I gave it a rehandle, a thinning and it was a good performer. I gifted it to my best man at our wedding. I remember whe...

Re: What did you cook today?

I made lasagna last week using Rao's and I have to say it was pretty good. I'd normally make sauce from scratch, but this back injury hates it when I stand too long. I buy it when it's on sale - usually $4.99/jar a couple of times a year.

Re: What did you cook today?

Rug slipped out from under me the other night and I fell flat on my back. I don't know how, but my left foot looked like a mango and my ankle a grapefruit. I haven't been down stairs to cook in three days, but tomorrow I'm giving it the old college try. I need wine damnit.

that Artifex will fulfill your needs. If you don't know how to sharpen buy that option then use the money you save for a couple of stoned and learn to free hand sharpen. You'll be glad you did!

Re: TUMBLER DIAMOND ROLLING KNIFE SHARPENER SET

Get a set of stones and learn to sharpen free hand - you'll never look back. Every knife is different and once you learn the "feed back" you get from the stones it can be magic.

Re: Christmas knives??

I don't buy much in the way of knives anymore, but I did well a friend of mine my Artifex BD1N 210 gyuto because CKTG was out of stock. He gave one to his wife last month, but wanted one for his brother so . . . Excellent knife BTW - if they made a 240 I might consider it.

Re: What did you cook today?

Happy New Year everyone. I used to make "Hoppin' John" on new years, but since I'm allergic to legumes I don't anymore. I roasted a turkey carcass on Thursday and made stock from Thursday till Saturday morning at 199F. Excellent bone broth - then I took half and made turkey soup today. It ...

Randy makes some great damascus that's for sure. I wish I could swing it, but I'd be hard pressed to part with two to buy it - GLWS.

Re: What did you cook today?

It was a raw day today and perfect for a Spanish inspired seafood stew. It's a very simple and rustic dish to make. Onion, garlic, tomato paste, tomatoes, white wine (cook the alcohol off), bay leaves, thyme, salt and pepper. For the protein I used squid, shrimp and muscles. Swerved with a crusty Ci...

Re: Vacuum sealer needed

I have an Anova vacuum sealer and I really like it. It goes back in the box after use and takes up no counter space. I've had it a couple of years and use it often - never had a problem and for $65 it's hard to beat. I make bags from bulk rolls so no buying pre-sealed ones for twice the price. https...

It's been bitter cold here the past couple of days so I made one of the most perfect comfort foods - Chicken Gumbo with Carolina Gold Brown Rice and Home Made Biscuits. A 16oz. one beer roux using bacon drippings for fat, leek, celery, green bell pepper, garlic, andouille sausage, chicken stock, sal...

Thanks! I like that little petty Del made. I also wish I could get more of the Hiromotos. Those were good western knives back in the day. I still have mine. Sadly Master Nagao retired with no apprentice so no more Hiromotos except for the secondary market. The Tenmi Damascus was I think the last 24...

Re: Which Title Describes Your Knife Collection?

Yes I would say just that. I got busy cleaning out a drawer today - one drawer and it took all afternoon including shred time. Tomorrow I'll start another one and eventually the office will be clutter and dust free - maybe even organized.
