Thanks for the comments Joe. Slicing a roast with this knife always makes me smile. I may need to keep this one.

Not very good pictures, but here's the spine and choil. Nice grind. Thin behind the edge.

SOLD - Ikeda 250 KS Gyuto - PRICE REDUCED!!

Selling my Ikeda AS 250 Gyuto. This is a wonderful knife, but I'm reducing my reactive knives, so hopefully she finds a new loving home. Maker: Takumi Ikeda Core: Aogami Super. Excellent heat treatment. Sharpens easily and takes a very keen edge. Cladding: Carbon Steel (Reactive) with Suminagashi pa...

Re: WTS Gihei Blue #2 Nashiji 240 Gyuto - REDUCED PRICE

Price Reduced to $180. This knife doesn't get the attention it deserves. It has a great grind and sharpens easily for B#2. It handles similar to my Toyama Noborikoi, but has a better grind and I prefer the Gihei cores steel. Sold the Toyama a while ago, but kept this one. Hope I can find it a good h...

SOLD - Gihei Blue #2 Nashiji 240 Gyuto

Selling my Gihei Blue #2 Nishiji 240 Gyuto. This is a very good workhorse knife, but I'm using my stainless knives more these days, so this one needs a new home. Very little use. SOLD - Tanaka Sekiso B#2 240

Selling my Tanaka Sekiso Blue #2 240. Love this knife, but I need to reduce the number of reactive knives I own. The knife comes with a saya and the handle is sized to shift the balance point towards the handle. The Sekiso is normally weight-forward, but this one is balanced closer to the grip. The ...

I thinned it. Just a bit so it was thinner behind the edge.

Re: WTB 240mm iron clad Watanabe/Toyama, KU mazaki

I'm thinking of selling mine. Hasn't got much use for a while, so it needs a new home. Toyama Noborikoi Kasumi Gyuto 240mm Blue #2 Original Ho D handle 7.2 oz (221 g), 245x54, thickness at heal = 3.5 mm. Thinned a bit and sharpened, so finish is not original and has some light scratching. Will remov...

Re: WTS Meara JNS

I use mine after an Aono Aoto. It is a hard stone, as Rob points out, and the feedback it VERY subtle, but it does the job. I often touch up my knives on the Aoto and the Meara.
